Seven Dishes

Monday

Asian-Style Pork and Noodles
Orange juice, hoisin sauce, and cider vinegar give this pasta its sweet-and-sour flavor. The vegetables are quickly cooked so they stay crisp. You can use almost any type of noodle in this dish.

Tuesday

Wednesday

Tuna Burger
Lighter than a burger but just as filling. The mizuna, a green available in specialty-food stores, can be substituted with watercress.

Thursday

Spicy Chicken Enchiladas
A weeknight version of a Mexican classic. Cooked chicken is heated with cream cheese, salsa, cumin and cheddar is rolled up in flour tortillas and baked.

Friday

Stuffed Eggplant Parmesan
A vegetarian treat for any kind of eater.

Saturday

Thai Beef Salad
The hot-and-sour dressing has an exotic flavor, yet has just a few ingredients.

Sunday

Tex-Mex Summer Squash Casserole
